Pineapple Empanadas

Ingredients

  • 4 cups Flour
  • 1 tsp Sugar
  • ¼ tsp Salt
  • cups Shortening
  • 1 ea Egg well beat
  • 1 tbsp White vinegar
  • ½ cup Water
  • 1 can 10oz Pineapple preserves
  • 1 cup Sugar
  • 1 tbsp Cinnamon

Instructions

  • Sift flour and mix with sugar (1 teaspoon) and salt
  • Cut in shortening using 2 forks
  • In a large bowl, combine well-beaten egg, vinegar, and water
  • Using your hands, mix the dough to form a ball
  • Chill for 30 minutes
  • Divide the dough into 2-inch diameter balls
  • With a rolling pin roll into circles about 2 inches in diameter
  • Place 1/2 a teaspoon pineapple preserves on one side of each circle
  • Fold the other half of the dough over the preserves
  • Pinch the edges to seal
  • Bake for 14 to 18 minutes at 350°
  • While empanadas are baking, mix sugar and cinnamon in a large bowl and set aside
  • Gently remove baked empanadas from cookie sheet and coat with cinnamon-sugar mixture
  • Place on platter to cool.
  • You may substitute the preserves with other flavors if you so desire
